    Super easy, super tasty:
Simmered some coconut milk and peanut butter together, about %60 milk 40 PB, and sriracha spice (red curry also works) and mixed it all together. Makes a great spiced peanut sauce to be served atop veggies and rice, noodles, whatever.

We just mixed it up with jasmine rice and munched it down. Nummers.

That falafel looks tasty. Falafel is one of my favourite things to make. Today I had a Sezhuan/Hunan style stir fry with lots of vegetables and some salad with croutons. I made it yesterday so the flavours had plenty of time to soak in, it was sooooo tasty.

    I love being vegan. :D

Tofu scramble with orange bell peppers, red onion, and kale.

Brown tofu in a little water and a tablespoon of coconut oil, on medium heat in a large skillet. Stir occasionally.
Once light brown, add spices. (powdered mustard, cumin, curry, red pepper, garlic, oregano, parsley, basil, etc.)
Add a little more water, add veggies. (Mushrooms, bell pepper, spinach, kale, tomato, squash, onion etc.) Put lid on skillet.
Add a dash of Bragg's aminos to taste.
    Stir and serve.
