Super easy, super tasty: Simmered some coconut milk and peanut butter together, about %60 milk 40 PB, and sriracha spice (red curry also works) and mixed it all together. Makes a great spiced peanut sauce to be served atop veggies and rice, noodles, whatever. We just mixed it up with jasmine rice and munched it down. Nummers.

That falafel looks tasty. Falafel is one of my favourite things to make. Today I had a Sezhuan/Hunan style stir fry with lots of vegetables and some salad with croutons. I made it yesterday so the flavours had plenty of time to soak in, it was sooooo tasty. I love being vegan.
i had vegetarian chili my mom made last night. it's got beans, carrots, onions, tomatoes, chunks of eggplant, and some kind of cheese sprinkled all through. DELICIOUS.
a burrito: basil tortilla, brown rice, vegan chili, soy cheese, tomatillo sauce, guacamole, letuce, blach olives and pickled jalapeno.
I made microwave Smores with Nutella instead of Chocolate. Absolute crack. I think I'm gonna go make some more now in fact,,,
Homemade chili, and some bananas dipped in chunky peanut butter. Brown peppers and onions in a mixture of water, olive oil, and coconut oil over medium heat. Stir frequently throughout recipe Add tomato sauce, raise heat to medium high. Add diced tomatoes Add chili spices Add beans Add crumbles or TVP, Lower heat to medium. Add cooked wild brown rice. Stir and serve.
I cooked some raw tofu with a mix of spices. It wasn't very yummy, but it was the first time I tried to cook raw tofu!
Tofu scramble with orange bell peppers, red onion, and kale. Brown tofu in a little water and a tablespoon of coconut oil, on medium heat in a large skillet. Stir occasionally. Once light brown, add spices. (powdered mustard, cumin, curry, red pepper, garlic, oregano, parsley, basil, etc.) Add a little more water, add veggies. (Mushrooms, bell pepper, spinach, kale, tomato, squash, onion etc.) Put lid on skillet. Add a dash of Bragg's aminos to taste. Stir and serve.
