Vegetarian Lasagna Lovers

    Is there anyone out there with one or two great vegetarian lasagna recipes?:)

    this one is a no fail, and really easy to modify. Sometimes I make veggi burgers and crumble it in.

    Mushroom-Spinach Lasagna with Goat Cheese

    12oz baby spinach washed
    1/4 cup olive oil
    3/4tsp salt
    1/2 tsp black pepper
    2 tbsp finely chopped garlic
    1/2 tsp hot pepper flakes
    1 tsp balsamic vinegar
    2 cups finely diced peeled tomatos
    1/2 tsp dried rosemary
    12 oz porobello mushrooms, sliced
    1/2 tsp dried thyme leaves
    9 ready cook lasagna noodles (may need more or less)
    8 oz goat cheese or ricotta cheese
    8 oz shredded mozzarella cheese

    Preheat oven to 375 degrees Fahrenheit. In skillet, put olive oil, salt, pepper, garlic, pepper flakes, tomatoes, vinegar, rosemary, and thyme, cook until bubbly. Add mushrooms. Pour tiny bit of mixture into greased baked dish. Add a layer of lasagna noodles. Layer spinach and cheese. Repeat starting with sauce, until all ingredients are used. Bake 35-45 min.

    I make an awesome tofu spaghetti sauce, so I use it as a filling for my lasagna. I add ricotta cheese in between the pasta and the sauce and lots of mozzarella on top. I also like to use a creamy garlic or mushroom sauce and fresh spinach and mushrooms with the same cheeses, it tastes like heaven.

    I do an even simpler Veggie Lasagna.

    Ingredients:
    - 1 bag of frozen Broccoli/Cauliflower (sorry no specifics)
    - Cup Mushrooms, sliced
    - 1 Zucchini sliced
    - Lasagna Sheets
    - Pasta sauce

    Bechamel Sauce
    - Equal amounts of Butter and Flour
    - Milk - to desired consistency
    - Ground Nutmeg
    - Little bit of grated cheese.

    Method: Boil Broccoli and Cauliflower in a pot of water until completely soft. Mash with potato masher into a spreadable mix with little to no lumps. My layering system goes VEG MIX - PASTA - VEG MIX - MUSHROOMS - PASTA SAUCE - PASTA - VEG MIX - ZUCCHINI - PASTA SAUCE - PASTA - VEG MIX - PASTA - BECHAMEL SAUCE - CHEESE. In the oven until cheese has browned and pasta sheets cooked.


    And there you go, a very basic/budget Veggie Lasagna. You can really add any veggies to the mashed up mix. I must apologise for the semi-unclear recipe/method but I don't really think about how I will write it down when I make these things up. :D
