well, i've got to use up some of the tofu for dinner before it goes sour, but i'm bored with all the usual things i do with it: saucy bars, glazed french onion bars, or stir-frys and simmered tofu in broth with asian greens and carrots. so what do i do with all this tofu?
umm, kebabs? marinated in lime juice, brown sugar, sweet chilli sauce and a dash of white wine. mmmmmmmm. or you can grill it in slices, then serve it on a pile of bok choi/silver beet, shaved zuchinni, caraway seeds and raw carrot, with a carrot and orange puree on top (a LOT nicer than it sounds, lol ) Or, if it is silken/soft tofu (firm might work) you can proceess it with breadcrumbs, peacn or brazil nuts and herbs and make tofu balls - use them like meatballs, for instance on pasta with a tomato based sauce. http://vegweb.com/ is a good place for recipies involving tofu. mmmm, i think i might visit there myself and find a nice recipie for dinner...
you can make veggie burgurs... Mix 2 cups of tofu with 1 can condensed mushroom soup, 1 diced red pepper, 1 clove crushed garlic, 3/4 cup diced onion, 1 cup mixed herbs (basil, thyme, rosemary, etc), one egg to bind it all together, and a tsp of soy sauce. Make patties the size of the palm of your hand, 1" thick. Sprinkle a little cheese on top if you wish. Spread them out on a pan and bake in the oven at 325F until golden brown. (flip them over once and grill a little longer in the oven, to bake it more evenly) Serve on buns with your favourite topings.
