totally bitchin' pasta salad

    my favourite lazy recipe ever. measurements aren't really necessary cause you make this with whatever you've got lying around. it's really easy to improvise, too. my parents always add beef strips to it.

    1 pot of cooked pasta
    chopped cherry or grape tomatoes
    chopped spinach or lettuce
    finely chopped parsley
    pitted, roughly chopped kalamata olives
    hot eggplant strips (an antipasto that you buy in a jar or at the deli - they're awesome)
    chopped green onion or very, very finely chopped/sliced red onion
    chopped cucumber
    chopped bell pepper

    dressing:
    1 or 2 cloves of garlic (depending on your taste)
    2 tbsp balsamic vinegar
    1 tbsp dijon mustard
    1/4 - 1/3 cup olive oil
    pinch of salt

    to make the dressing, pound the garlic and salt into a pulp with a mortar and pestle. then mix in vinegar and mustard, and gradually whisk in olive oil. dressing should become thick.

    mix all ingredients together, toss with dressing, et voila!
