tofu in brownies?

    my co-op carried these wonderful brownies from a local vegan baker that were made with tofu instead of eggs. they no longer seem to be carrying the brownies. but they were so incredibly dense, moist and rich! does anyone have a recipe for anything similar?

    16 oz. silken tofu
    2 cups sugar
    3/4 cup cocoa
    1/2 cup corn oil
    2 tsp. baking powder
    1 tsp. salt
    2 tsp. vanilla
    2 cups whole wheat pastry flour
    1 bag chocolate chips (brownies will be vegan if you use Sunspire or other vegan chocolate)

    Preheat oven to 350. Basically these ingredients just get blended together in a food processor in the order given.
    The chocolate chips are added after. If you do not have a food processor, the tofu could be mashed and mixed with the wet ingredients and sugar, then add the dry ingredients, and, finally, the chips. Grease and flour a 9x12-ish inch pan and spread mixture into pan. Bake about 25 minutes, test with a toothpick, these will be a little fudgy. I like to keep my tofu brownies refrigerated. These are really rich tasting, tofu is a great delivery system for
    chocolate.

    thank you. this is just the kind of thing i was looking for. do you suppose i could substitute applesauce for all or part of the oil?

    I really like the desserts from the 'Simple Treats' cookbook.
    You can find a recipe from this book for "Chocolate Chip Blondies" on my recipe pages. They are really good! (I made them with carob instead of chocolate).
    This same book also has a brownie recipe which is supposed to be really good, but I haven't tried it yet.

    Just as a tip, I find that I get MUCH better results when baking with Tofu if I use the firm silken tofu that is shelf stable, like http://www.morinu.com/index.html, rather than the silken tofu you can find in the refrigerated section.

    Heres a really good recipe I used which is from my vegan cook book called Vegan Planet.
    Its pretty fast to make:

    For egg replacers equal to 2 eggs:
    1/2 cup drained soft tofu
    1 teaspoon baking powder

    For the rest of the ingredients:
    1/4 cup corn oil
    4 ounces semisweet vegan chocolate chips
    3/4 cup sugar or natural sweetener
    1 teaspoon pure vanilla extract
    1 cup unbleached all purpose flour
    1 teaspoon baking powder

    1)preheat oven to 350 degrees F. And lightly oil an 8-inch square baking pan, and set aside.

    2)Make egg replacers by:
    Mixing together the 1/2 cup drained soft tofu and 1 teaspoon baking powder
    Set aside

    3)In a small saucepan over low heat, combine the 1/4 cup corn oil and the vegan chocolate chips, stirring occasionally, until melted. Remoce from heat and set aside.

    4)Place the egg replacer in a large bowl. Add the sugar and vanilla and belnd well. Stir in the chocolate mixture and blend well. Stirn in the flour and baking powder, mixing well. Spoon the batter into the prepared pan.

    (Note: The mixture might be "lumpy" but it seriously goes away once its fully baked)

    5)Bake until the top springs back when touched, 20-25 minutes. Let cool before cutting into squares.
