not many people make thai curry very well .. which is beyond me because its so simple and yummy .. don't think your thai curry restaurant experience is what thai curry is about ... 1) lots of inch cut or bigger potatoes . (starch helps thicken it up) 2) two red bell peppers 3) snap peas 4)two-3 large onions cut in four . 5)can of baby corn 6) thai , or japanese egg plant . 7) chopped lime zest,garlic,chillies ,and ginger ,thin thin potatoes) 8) proper curry paste( cockbrand or mapoiy).not fucking market taste of thai garbage ... 9) 4-6 cans coconut milk 10) jasmine rice 11) chicken 12) peanuts can add w.e veggies you want just cut it to match size .. so its fucking simple ... put curry paste n ur chopped fresh lime,garlic..ect in a pot with a bit of peanut oil and fry that shit till it smells good and starts to flare up . take your time but never burn it . add coconut milk and stir and let combine for 10 minutes . drop potatoes (carrots) now ! let that go for ten minutes (never boiling) add onions and thai eggplant (not the Japanese ones..) add chicken now too so it soaks up the flavours though it could go in last as tiny cubes of chicken cook fast ... add red bell peppers and snap peas 10 minutes after . then baby corn when almost done (zucchini 2 if wanted) make jasmine rice for a bed! roast peanuts to serve over curry ..

First off, that's a huge recipe, probably feed 8 ppl. Second, I don't think potatoes are traditional thai food, but they do go good in curry, esp. Indian curry. Third, if you're really adventurous you can skip the curry paste and make your own. You've already included the primary ingredients. You just need to add a few more to make it authentic. Like lemongrass, galangal, fish sauce, lime leaf, etc. All available at asian markets. If you use prepared curry paste you don't really need to add the other flavorings, but they do work better if fresh.
1)i made curry paste at cooking school its fucking expensive. 2) why make curry for one person..great as a left over . 3) who fucking cares if potatoes r not in traditional thai curry it taste good and is my take on it. 4) ummmm yeh if u add fresh aromatics to curry paste it has a very summery taste and does make a huge difference .. 5) adding thai basil or basil in curry is great too forgot to add it . 6) you forgot the dried shrimp paste ..
