I came across this muffin recipe and thought I'd share it. If I make them, I'm just gonna use applesauce as an egg substitute to make them vegan. Who am I kidding, I probably won't make them (I hate cooking), but maybe. Well, just thought I'd share cuz they look delicious! Ingredients 3 cups cake flour 1 teaspoon salt 1 teaspoon baking soda 1 teaspoon baking powder 2 teaspoon cinnamon ½ teaspoon ginger 3 eggs 1 cup vegetable oil 1 cup white sugar 1 cup brown sugar 2 teaspoons vanilla extract 1 cup carrots, finely shredded 1 cup zucchini, finely shredded ½-1 cup squash, finely shredded Instructions Preheat oven to 325 In a medium sized bowl, whisk together flour, salt, baking soda, baking powder, cinnamon and nutmeg. Set aside. In a separate large bowl, add vegetable oil, packed brown sugar, & white sugar. Use a mixer to combine. Mix in the eggs. Stir in pure vanilla extract. Add dry ingredients into wet ingredients. Stir gently just until well combined. The batter will be thick and doughy. Stir in the fresh shredded vegetables. Generously grease and flour muffin pans. ughhh I may just challenge myself with this and make them and then post a pic..... I'm not lazy. I suck at cooking and do not enjoy cooking at all. When I try to make anything, Anything, it burns! I burn toast, I burn boiling water, ermmm I accidentally left some cardboard on a frozen pizza the other night..
I've made a vegan version of these and they worked out well. The first time I made them they were way, wayyyy too heavy/moist, and didn't cook properly. I love baking, especially vegan baking. It's an addiction.
looks great, I don't have vegan brown sugar so I will make some substitutions and use gluten free flour. Other than that I can do it.
