spelt bread?

    has anyone ever baked bread with spelt? can wheat-free spelt bread be made in a bread machine? where can i find some recipes?

    hi kitty fabulous, spelt flour is actually an old viriaty of wheat, used a great deal by the romans. you can not make a spelt loaf in a bread machine this is because the preperation of the dough is different from common wheat flour, and traditionally it was cooked on a flat baking pan because of it qualities which make it very good at rising.

    tried and tested recipie;
    spetl flour 500g
    sea salt 1tsp
    olive oil 3tsp
    honey 1tsp (or vegan sugar)
    fresh yeast 15g
    warm water 400ml
    (37c/100f)

    place flour in mixing bowl
    blend yeast into half the water and roughtly mix into the flour
    disslove the salt in the remaining warm water and add the flour, followed by the oil to form a sloppy dough
    mix well for 15 minuites with wooden spoon
    either divide the dough between two large greased bread tins or for a typical slipper loaf cut the dough in half a put on 2 large baking trays
    dust with flour and allow to rise for 20-25 minuites
    pre heat overn to 180'c 370f gas mark 5 and bake slippers for 35 minuites and loaves for 40-45 minuites

    it makes a very light airated soft bead with very good taste. you could also use just a percentage in with other flour as well.

    actually, i substitute spelt for wheat all the time. i have found that it's MUCH lighter than regualr wheat & it makes INCREDIBLE biscuits...they are sooo much fluffier than other whole grain biscuits i've made. also, i have used it in my bread maker, but i wasn't pleased with the results (of course i've really never been pleased with the bread maker anyway)
    but don't hesitate, it works for quick bread recipes as well (like banana, zucchini, etc)...i think you'll be pleased
