mmm Squash! Did I ever mention how much I love Sqaush? I made some baked and then pan fried speghetti squash and oh it was so good. If you love olive oil and garlic you need to try this recipe!! 1 spaghetti squash cut in half long ways 10 whole garlic cloves 1 purple onion (or whatever onion you like) 1 bag of frozen mixed veggies like broccoli, cauliflower or a mix, or if your lucky enough, FRESH veggies mmm 1/2 a cup of olive oil Tablespoon of chopped parsley Put squash in oven on a baking pan~ cut side down for 40 minutes in a 375 degree oven. Meanwhile add olive oil to a large stove top pan and put on med heat. Add Chopped onion and garlic to the oil. stir a bit and Let it carmelize. Use a fork to mash the soft garlic cloves in the pan, let cook and then add the frozen veggies. Stir and let it em get tender. Using a spoon, scrape out the spaghetti in the squash and add to the pan (careful its hot!) add salt and EAT IT. Its so Yum and good for you too! You can even add other stuff, I just used what I had in the cupboard and it came out nice (plus the organic sqaush I got at the pumpkin patch was inspiring!)
Sounds great!! you can also pour veggie spag sauce over it replacing the high carbs in pasta, plus you get all thoes extra vitamins. I want some right now.. sh
I love spaghetti squash b/c it can be either a dinner-type food or a dessert, dependng on how you season it.
mmm... This sounds so darn good it made me buy a spaghetti squash today at the store! I'm trying a variation, (the squash is already in the oven right now, actually) with onion and garlic, and red and green bell pepper. And a big ol' salad to go with. My tummy's grumblin already, I can't wait to eat!
Mmmm..I usually toss mine over basmati rice, with roasted garlic, & add spaghetti sauce to the top, but that sounds good too!
I love it with tomato sauce. I feel less bloated when I eat it instead of spaghetti. For some reason the squash is so expensive though! and so light!
