    Scallops With Bacon And White Wine

    Ingredients

    8 Large Scallops

    50 gms (2oz) Butter

    2 Spring Onions

    2 Rashers Middle Bacon

    150 ml (1/2 Pint) Light Chicken Stock

    150 ml (1/2 Pint) Dry White Wine

    2 Tablespoons Chopped Parsley

    Flour For Dusting

    Salt And Pepper

    Thinly slice the scallops into two pieces each and season with pepper only,dust them lightly with the flour.

    Melt the butter in a heavy frying pan and add the chopped spring onion,cook gently for a few minutes then add the chopped bacon,cook a further 5 minutes,add the sliced scallops and cook 1 minute on each side.

    Add the stock,white wine and parsley,cook a further 2 minutes.

    Adjust the seasoning and serve immediately topped with some of the cooking liquor.
