Question about an ingredient

    I'm aware that this isn't a vegetarian ingredient, but in one of Linda McCartney's book, several recipes call for creme fraiche. Can anyone tell me what that actually is?

    Also, what is vegetarian mince?

    If these questions have obvious answers, please excuse my ignorance. :)

    ETA: I think I know the answers to THESE questions, but just in case, is courgettes the same as zucchini? And mangetout the same as snow peas?

    Crème fraiche is a soured cream, but is less sour than sour cream itself. So you can easily use it for both sweet and savoury recipes.

    Vegetarian mince is usually made from soya rather than cow. Just another meat substitute, with similar texture.

    Yep, courgette is a zucchini, and mange tout can be used for both snap and snow peas.

    You can easily replace creme fraiche with sour cream.

    Oh ok, awesome. I wasn't sure if I could replace it with sour cream or not, and I'm having a hell of a time finding the actual creme fraiche.

    Made another Linda McCartney recipe tonight, eggplant and herb casserole. Was amazing! The woman was a genius!

    straining plain yogurt will also do for creme fraiche, and you control the thickness. To go vegan, a non dairy yogurt, or silken tofu with a touch of vinegar can work.
