Oh my gosh. Made the absolute best thing last night. Baked Pumpkin Seeds. I know I haven't posted in a while but this one is killer. After carving pumpkins we had so many seeds left. Heres the deal Put seeds on baking/cookie sheet. Any sheet will do Add topping. I used salt and butter. I'm sure you can come up with your own ideas of what you will like on them. Bake on broil for 1-20 mins. It's like sunflower seeds, but I figure since we got them we may as well use them. Better not to waste. When they first come out you can just eat the whole thing. Shell and all. They are warm and go down well. But, after they cool, I wouldn't suggest eating the shell! Just pop open like a sunflower seed. Some of the seeds are bitter though so, I just suck the salt off of them. They taste good, they have the pumpkin taste and it's yummy.
also, you don't really have to wash the seeds off too much. the little pieces of pumpkin goop that is left on, actually gets all crispy like a potato chip. Only, really salty and full of flavor!
i have a recipe for roasted pumpkin seeds in one of my persian cookbooks - quite the delicacy and always easy to come by this time of year!
my mom always added a little worchestershire sauce to them. We do ours with garlic & salt. Dh & I could eat these 'til we burst, but the kids won't touch 'em! love, mom
Do they make veggie worchestershire? I did not realize it until one day I happened to read the label of a bottle in my cabinet that it contains anchovies. Atleast I rarely used it.
Eww! I knew I didn't like the stuff, but I had NO idea there was anchovies in it! I haven't ever bought a bottle of the stuff... every time my mom eats over, she asks how I can cook without it. love, mom
i like to rinse them first, then toss with olive oil and salt. another good way is with a bit of brown sugar and cinnamon for a sweeter treat. i prefer them with the shell on after they're cold too... mmmm i love pumpkin seeds so much!
