    Ingredients

    4 Pork Fillets

    1 1/2 Teaspoons Curry Powder

    30gms (1oz) Butter

    1 Tablespoon Lemon Juice

    For The Mustard Sauce-

    1 Cup Water

    1 Chicken Stock Cube

    2 Teaspoons Lemon Juice

    2 Teaspoons French Mustard

    2 Tablespoons Cream

    2 Teaspoons Cornflour

    2 Teaspoons Water

    Salt And Pepper To Taste

    Method

Trim all fat from the pork fillets, sprinkle the curry powder on a sheet of greaseproof paper and roll the fillets in the curry powder.

Melt the butter in a baking dish add the pork fillets and sprinkle with the lemon juice ,bake uncovered in a moderate oven for 15 minutes or until tender, basting frequently during cooking, remove from oven and slice thinly, serve with the sauce.

To make the sauce place the water in a small saucepan add the crumbled stock cube, lemon juice, mustard and cream, combine the cornflour with the 2 teaspoons of water and stir into the saucepan and continue stirring till the sauce comes to a gentle boil and thickens, reduce the heat and simmer uncovered a further 3 minutes ,season to taste with salt and pepper and serve with the pork.
