Scald the pig's head, scrape it clean, split it in two and remove the eyes. Rub the head with vinegar and cover with cold water, add 8 peppercorns and a 1 teaspoon salt. Cook very slowly until tender (about 3 hours). Cook 1/2 lb. black-eyed peas in salt water until they are almost tender. Grate a coconut and make 1 cup coconut milk. Add this, with 2 cups rice to the black-eyed peas. Cook until the rice is tender. Serve in a hot dish with the pig's head in the centre and the rice and peas round it.
1 pig's head 1 1/2 lb. lean pork 2 tablespoons salt 2 teaspoons pepper 1/4 teaspoon ground cloves cayenne pepper to taste. Cut off the cheeks and add to the pork. Clean the head, place in a saucepan, cover with cold water, add the pork and boil until the meat comes away from the bones (2 to 3 hours). Remove bones. Chop pork and meat away from head with sharp knife while still hot. Stir in salt, pepper, cloves and cayenne to taste. Place in loaf pans and moulds rinsed in cold water. Press and leave until cold. Serve with salad.
Wash the feet and put in a pan with 1/2 sliced onion, 1/2 sliced carrot, 6 peppercorns, 2 sprigs parsley, a bay leaf and 1/2 teaspoon salt. Cover with cold water, bring to the boiling point and simmer until done (5 to 6 hours). Serve cold or hot. Store in broth until used.
1 pig's head and trotters limes salt 1 sweet pepper cucumber. Wash and clean the head and trotters. Cover with water and boil until tender. Leave to cool, then remove from the pan. Cut the meat into pieces; skin the tongue and slice it; cut the trotters in half. Place the meat in a deep dish, add 2 teaspoons of salt, the juice of 4 or 5 limes and cold water to cover. Leave over-night. Remove from the brine and serve with a sauce made from the juice of 2 limes, 1 chopped pepper, sliced cucumber, 1 teaspoon salt and 1 cup of stock.
Parboil 6 onions for 10 minutes. Drain and chop fine. Add2 cups soft breadcrumbs, 1 tablespoon chopped sage, 1/2 teaspoon salt, 1/8 teaspoon pepper and 2 tablespoons melted butter.
Wow. I have tried something called "Pig's Eye Beer" from the import brew section once years ago. Didn't taste very good, they should have left its eye in its head.
