Picky Boyfriend! Recipes?

    So my boyfriend and I don't eat mammals, but are still consuming fish, shellfish, and some poultry. He's not a huge veggie eater like I am. (Give me a bowl of sauteed mushrooms and I'm thrilled. [​IMG])

    We love and make Filipino, Chinese, Thai, Mexican, Italian, French, and American dishes on a regular basis. I would like to start having a few more veggie meals a week, but he will not eat:

    Mushrooms
    Eggplant
    Anything super spicy

    To boot, we both have IBS.

    Any recipe ideas?

    What about bell peppers? I remember when I was a kid I was super picky about vegetables (in fact, I looked at consuming them as a sort of punishment) and the first veggies that I really fell for were bell peppers. Specifically, red ones. They're so sweet, with just the right amount of tangy, and they compliment so many foods perfectly.

    To be honest, I don't know what that all has to do with your question though. For some reason it was the first thing in my mind and seemed extremely relevant. But perhaps you should be thinking about all the things he likes. Walk him through the produce section, point out just about every veggie, and find out whether he likes or dislikes it and why. You might even be able to cook up some of those notoriously disliked veggies in a way that he likes!

    As far as meals go, when we first made the switch it wasn't that hard because our diet was already so varied. It's surprisingly easy to just make the same things and substitute veg for meat. One of my favorites is a yummy super-thick pasta sauce - I'll saute anything I've got handy, onion, garlic, papper, carrots, broccoli, anything at all, and add a jar of regular pasta sauce at the end. :) Experiment - it's not nearly as hard as we make it out to be in our minds!

    lol...yes my hubby is also a non veggie eater (he does like fresh carrots and broccoli..but thats the extent)...somoehow he thinks he can live on only very rarely fruit, meat, bread and pastas...this mostly has to do with the fact that his parents never taught him the proper way to eat healthy..its not his fault. his mom would let him eat chocolate for breakfast, chips and hot dogs for lunch and a fast food burger for dinner with junk food in between.....

    im not saying this is your case but it may be. try asking him what kind of foods he grew up on, and see if he has a fave veggie and go from there. thats what i did:)...good luck hunny.
