you must try these.......so simple...so good.... 1 cucumber 1 T. salt 1 T. sugar 1/4 c. vinegar 2 T. water Dash pepper Peel 1 medium sized-cucumber. Thinly score lengthwise with the tines of a fork. Slice thin into a flat bowl. Sprinkle with salt; cover with a second bowl of the same shape and place a heavy object on top. Let stand several hours. Drain off juice; pour over cucumber a mixture of the vinegar, water, sugar and dash pepper. These are also really good when you serve them with curry.
i just made them.. i dont think i let them sit out long enough but they were really good anyways lol thanks
its important to let them sit for a couple of hours with the salt.....that way...more of the natural wateriness of the cucumber comes out....
i used to pick some fresh zuccini, and use applecider vinegar(cus we made it there) and use some cloves of garlic, with the above mentioned ingredients. mmmmmmmmmmmmmm.

this is the perfect time of year for these things....i'm eating some right now with my lentil and couscous soup....mmm.....they compliment the soup so nicely.....
