orzo salad

    A great salad to take to barbeques - especially to help feed us vegos. This is filling and so tasty, we made it heaps over summer.

    anyway cook up a bunch of Orzo pasta (the one that kind of looks like big bits of rice)
    throw it into a bowl along with heaps of the following: feta, halved cherry tomatoes, fresh basil and parsley, toasted pinenuts , toasted, sliced almonds and kalamata olives. Then pour on a wee bit of olive oil and some red wine vinegar (to taste, i add a fair bit, as i find that the vinegar cuts through the pasta really well)

    anyway, toss it together and decorate with some semi dried tomatoes.

    mmmm.

    a lot of people seem to be using this Orzo pasta - I didn't realize it was this popular!

    great recipe though!
