my new favourite tuna salad

    - 3.5 cups drained canned tuna
    - 1 cup finely chopped green onions
    - 1 finely chopped red pepper
    - 2 tblsp sesame seed oil
    - 3 large cloves crushed garlic
    - 1/2 cup finely chopped lemonbalm or lemongrass
    - 1 heaping tablespoon relish
    - 2 cups mayo
    - 1/3 cup dijon mustard (preferably the 'chunky' or mustard seeded one)
    - 1 tsp curry powder
    - salt and pepper to taste (preferably use celery salt)

    Break up tuna in a bowl. Mix in green onions, lemonbalm/lemongrass, and relish. In a frying pan, warm up sesame seed oil and fry up the garlic for about a minute. Then toss in red pepper, and fry until well done. Mix entire pan's worth into tuna.

    In a separate bowl, mix together mayo + dijon mustard + spices. Then mix in with the tuna, and blend as well as possible. Refrigerate for at least 1 hour before serving.
