Recipe By :Lani, Queensland, Australia Serving Size : 2 Preparation Time :0:20 ——– ———— ——————————– 1/4 cup couscous 1/2 cup unsweetened apple and black current juice (total) 1 cinnamon stick 1/3 cup raspberries 1/3 cup blueberries 1/3 cup strawberries 2 teaspoons lemon and lime zest 1 teaspoon mint leaves — shredded fine 1/4 cup plain low fat european styled yogurt. 1 teaspoon drizzle of honey Place the couscous in a bowl. In a saucepan put the fruit juices and cinnamon stick, bring to the boil then pour over couscous. Cover the bowl and leave to stand for 5 minutes. Remove the cinnamon stick and put in the fridge. When cool seperate couscous with a fork untill light and fluffy, add the berries, lime and lemon zest and mint and gently fold through. Put yogurt on top, drizzle with honey and top with any remaining zest. - - - - - - - - - - - - - - - - - - - Per Serving (excluding unknown items): 189 Calories; 1g Fat (3.5% calories from fat); 5g Protein; 43g Carbohydrate; 8g Dietary Fiber; 1mg Cholesterol; 31mg Sodium. Exchanges: 1 1/2 Grain(Starch); 0 Vegetable; 1 Fruit; 0 Non-Fat Milk; 0 Fat; 0 Other Carbohydrates. NOTES : I guess you could use all kinds of flavours for this but I’m such a berry freak. Citrus would go nicely, as would any drived fruit and nuts if you wanted to go in that direction. Sweeten it a little and you could even have it as a dessert or, in smaller portions, as a mid afternoon snack
