Minty Vanilla Lassi

    I love this drink with a spicy meal...a yogurt based Indian beverage. Here are some of my favorite ways to make it:

    Serves Two

    In a blender, combine the following -

    2 Cups Vanilla Yogurt (I use non-fat organic) or plain with some vanilla extract

    6 chopped spearmint leaves (organic is ya can)

    Your choice of sweetener to taste (I use Stevia, but you can use extra fine sugar)

    1 tsp. organic honey

    Tiny pinch of cinnamon

    10 ice cubes

    Blend Till Smooth and Enjoy!!

    Variations:

    Substitute vanilla flavored yogurt for your favorite

    Add fresh mango or peach slices

    Fresh Strawberries

    A Splash of Coconut Milk and Fresh Squeezed Lime

    oh yum..... I think that adding the coconut milk and mangos would be soooo nice....

    4 cups strawberries. 2 cups buttermilk. 8 ice cubes. 2 teaspoons honey, to taste. Hull the strawberries and put them in a blender with the buttermilk and ice cubes. Blend until smooth. Check the taste and add 2 teaspoons of honey if you like.
