Mincemeat Fruit Loaf

    INGREDIENTS:

    8 oz Self-Raising Flour
    2 Eggs
    5 oz soft margarine
    5 oz Dried Mixed Fruit
    16 oz Mincemeat - NB - sweet mincemeat !!!
    Flaked Almonds


    METHOD:

    Place ingredients (except almonds) in a bowl and thoroughly mix together. Empty into a lined loaf tin. Sprinkle on the flaked almonds to decorate. Place in a pre-heated oven at 160 o C and bake for approx 1 Hr. When cooked through (a knife poked down through the cake is clean on removal) remove from oven and allow to cool. Voila !!! - Mincemeat fruit loaf - ENJOY !!!


    To add a little spice to it - add a SMALL tot of Brandy to the mixture before cooking.

    If I promise to keep my mask on and not bring Boris with me, will you invite me to your Christmas dinner party.

    I wonder how many people test cakes with a skewer these days, it is the only way to get them just right. Firm but not dried out.
