I've made root beer. It doesn't make much alcohol but it imparts a lot of fizz.

I'm not very skilled at fermented beverages. Antithesis mentioned some lesser-known starting materials for making beverages, such as wild plants, which can make a unique beverage.

Anyone else here have some skill at this?

I would like to make my own kombucha tea or kefir, but haven't gotten around to it yet.

There are places at the beach where I live who sell beer brewing supplies and kits. I've been meaning to do it, but since I'm friends with local brewers and get gallon growlers for free, it's no urgency. Sometimes I help them pour in hops and shit, 5 gallon bucks off trailers, it's no easy work.
