makeshift veggie curry

    so I had not alot in my cupboards yesterday and a load of friends coming over for some food. So I shoved lots of things together and made a veggie curry that turned out to be pretty tasty.

    ingredients:
    2 medium potatoes (peeled
    1 onion
    1/4 can of kidney beans
    50g red split lentils (soaked for an hour in boiling water before hand)
    1 yellow pepper
    garum masala spice mix
    cumin
    corriander
    turmeric
    1/4 pint of veggie stock

    I got a nice big saucepan and chopped the potatoes and onions and pepper and gave them a quick fry with a little sunflower oil in the saucepan. Then I poured over the lentils and all their wateryness and then poured in the stock. I chucked in the kidney beans and brought it all the the boil. Then I mixed in a bit of masala spice, cumin, ground corriander and turmeric, just enough to taste. I let the whole thing simmer for about an hour, stirring it occasionally. By the time it was cooked all the lentils had turned the thing nice and creamy and the turmeric made it go a lovely colour. I added a little more spice and salt and then served it with cooked brown rice. It was crazily simple and very yummy. Just thought I'd share it with all of you
