1 3/4 cups dried soybeans 2 quarts water 1 pandan leaf (optional) 1 slice fresh ginger root (optional) 1 teaspoon vanilla extract (optional) 1/2 cup white sugar Soak beans overnight in water. Drain, rinse, and discard water. Combine soaked beans with 2 quarts fresh water. In a food processor or blender, process beans with water until smooth. Strain into a pot through a double layer of cheesecloth, or a fine sieve. Add pandan leaf or ginger, and sugar to taste. Boil soy milk for 15 minutes. Stir frequently to prevent skin from forming. Remove pandan leaf or ginger, then flavor with vanilla. Stir in sugar to taste. Cool to room temperature, then refrigerate.
if you want to use honey, i think it would work better if you use perhaps a table spoon or 2 of honey, and a 1/4 cup sugar
Have you tried this recipe yet scarlettischasingroses? I'm curious about how it would taste. I'd use maple syrup instead of honey.
no i have not tried this yet....hehe....i'm lazy so i just buy silk soymilk....one of these days though, i'll try making my own soy milk.....and perhaps if it's good, i'll start selling it....
hey all i just tried this recipe (i don't know if the quantities are the same, i used 125g soya beans to 1 litre of water) and it was so easy! the milk is cooling at the mo but i tried some and it tastes so good. i've got some in tea right now and its actually a lot better than the shop stuff cus its not as thick so the tea brews better. also, once you push it all through a sieve you are left with loads of soya mush which i mixed with oats, olive oil, an egg and loads of seasonong and spices (like cumin, coriander, tumeric, paprika et.c) and its now burger mix. to make the burgers just shape this into burger shapes and dust with flour then grill or lightly fry. all this from a bag of beans. marvellous! cheers for the recipe
