Hey guys & gals, I've been having real trouble with packing lunch. It's hard for me to find things that are nutritious, easy and taste good. I really hate to cook, I love things I can just grab. I also cannot bring any nuts because, some of the children I work with are allergic. Any ideas. Thanks in advance. Sweet~Nothing.
when i packed my lunch, i used to spread a tortilla with hummus and cream cheese, then add some sprouts or lettuce, and maybe a little shredded cheese and roll it all up. or make a salad wrap, with a tortilla, some cheese slices, a bunch of lettuces, some veggies like mushrooms, onions, whatever i had on hand, and some salad dressing. that was yummy too. or i'd just take leftovers from dinner the night before. i also kept granola bars (the good healthy kind) and fruit cups for my lunches. yogurt was also a good grab and go, or string cheese. sometimes i'd pop popcorn and separate it into small ziplock baggies, so i had snacks to go too. hope some of this helped.
My absolute FIRST recommendation would be to look into some sort of divided dish with a good tight-sealing lid. The divided compartments really help, because you can look at them & think "okay, here is my carb/protein dish, this is my veggie dish, and this is my fruit dish" and you're no longer staring cluelessly at the fridge. Jennifer of Vegan Lunch box has a book out, and I think it'd be great for taking to the grocer's for ideas. (once every-other-week grocery shopping is when i get a rice bowl and plan the list over lunch.)
