Long John Silver's batter dipped fish

    3 cups soybean oil
    1 egg
    2 pounds fresh cod
    2 teaspoons granulated sugar
    1 1/3 cup self rising flour
    1 cup water
    2 teaspoons salt

    Heat the oil in a deep pan to 400 degrees. Cut the fish into approximately 7x2 inch wedges. With a miser, blend the flour, water, egg, sugar, and salt. Dip eat fillet into the batter, coating generously, and quickly drop into the oil. Fry each fillet until golden brown, about 5 mintues. Remove from the oil and place on paper towels or a metal rack to drain. To test oil, place a drop of batter inside. If it turns golden brown within five minutes, the oil is hot enough.
