Lentils

    anybody have any good lentil recipes??I need some because i love them but arent sure how to cook them properly or any recipes.

    they're good in curries or with stir fried veggies. I think they taste good with garbonzo beans (stir fry the beans, add to the lentils with spices) I also don't mind eating them plain, salted though.

    i made some and added vegetable broth green beans carrots and peas like a soup and put it in the freezer. i was hoping id come across something like that to add it to..thanks for the ideas:)

    get the tiny red lentils - they cook super fast. add a bunch of water or veg soup base (i boil beets to get a nice color and flavor for the water) to the lentils and add spices to taste. i prefer indian spices like curry powder, fenugreek seed, masala.

    then sautee onions with mustard seeds. add those in. you've got a basic dal soup, or at least my interpretation of one. you can add any extra veggies you like - i particularly like green leafy ones, like swiss chard and/or kale.

    i'd say the lentils should be about one - two cups to 2.5 - 3.5 cups water or soup base. the lentils will sorta mush up and form a substantial yet light and filling simple base. yummy and healthy!

    I was eating this luscious lentil soup for lunch today. The third spoonful had this hideous ugly chunk of something that looked like a hotdog in it. The only other choice for lunch was salad. I tried toenjoy my salad after that, but Ireally lost my appetite.

    Look up Indian recipes, they usually have lentils and lentils go great with Indian & curry-like spices (tumeric, cumin, mustard seeds, cinnamon, etc.). And as mentioned earlier the red lentils cook faster. Green lentils are similar to rice in cooking time, so they make a great addition to rice if you're cooking rice to go with a stir-fry or something.

    Check out "The New Vegan Cookbook" - it's got some great ideas for cooking a variety of grains. Another good one with plenty of lentil recipes is "La Dolce Vegan" by Sarah Kramer. I highly recommend both. :)
