leftovers 'n' eggs - breakfast of champions

    I had a few friends spend the night this past friday and were around for Saturday morning breakfast. The biggest thing I could make were eggs, and even then, the 10 that were left wouldn't be enough to feed everyone, so here's what I did:

    1) I grabbed my frying pan and filled it about 1/2 way with leftovers from my fridge: 1/2 a green pepper, a couple cloves of garlic, 3 hamburger patties chopped into bits, 4 hot italian sausages cut into bits, a tomato, and a cowboy steak cut into bits.

    2) as that was frying up, I beat the 10 eggs with 1/3 cup milk and 1/3 cup shredded Tex Mex cheese, poured it over the pan o' food.

    Best omelette ever, and I used up much of my leftovers!

    I do something similar, but use left over spaghetti or ramen noodles and whatever looks good in the refrigerator. Great for those days you have a hangover.

    i find the best way to make eggs filling is to throw in whatever leftovers i've had in the fridge. Especially veggies that are about to go bad in any day. It's saved the day quite a few times.
