This is a veggie challenge, basically. It's 5 p.m., everyone is hungry. You have, in addition to citrus and herbs/ spices and condiments: 1/2 lb of tofu two each of potatoes, carrot and onion a handful of garlic an unidentified bundle of greens that look OK to eat leftover lentil stew What's for dinner?
Cream of potato soup. Cook the taters, carrots, onion & garlic and whatever herbs sound good in enough water to cover until tender. Toss in the blender and mix to smooth or nearly-smooth & serve hot. With the tofu, you could fry it up & serve it on the side with candied citrus... assuming there IS just a touch of sugar & oil running around the kitchen too! Depending on what kind of greens they turn out to be, this might go well on a bed of green things too. love, mom
nice. yes you have all the usual seasonings, etc. Anyone else willing to step up? I chose Eithiopian. Now, I did this, and walked away for a day so I could not angle it to me. the idea came from a particularly bad leftover jumble I had several months ago.
Sound's like a Pizzahut afternoon to me. But yes, you could turn this into a pizza or a burrito. Food is a creative expression. Approach it as an artist to a canvas. x
I would dice the tofu, carrot and onion, finely dice a couple of cloves of garlic, and chop the greens. Marinade the tofu in similar spices and flavours to what is in the lentil stew. Fry the onion, then add the garlic and carrot, and then tofu and leftover lentil stew to heat through. Add the greens (if it has stalks, add them with the tofu and stew). Put this mix in an ovenproof dish. While all this is going on, boil or steam the taties, and then mash them. Spread the mash over the stew mix, and top with cheese if you are that way inclined (or some cheese substitute). Bake until golden brown and eat up!
