    Zucchini! What should I do with it? Does anyone know any recipes? I suppose I could cube the thing and make a delicious salad...

    yup...huge zucchinis are usually not great in a salad....smaller the better with zuch's

    cut into strips lengthwise and coat with olive oil....sprinkle chili powder generously

    bake until golden brown and tender or pan fry

    If you have one you likely have more. Roasted zucchini lasagna? Cut them the long way, roast them and use them instead of noodles.

    Somehow i dont think she started this thread to talk about salad recipes


    But while we ar at it, since someone mentioned it.

    I ___ing hate vegie/ zucchini lasagna. Crispy flaky pastry thay makes your mouth water, but then you dig in and its just friggin vegetables, no tasty meat and rich sauce

    I'm going to a house warming thingy on Saturday and I have to bring a massive salad. I think I will cube the thing and use it for that....

    I'm also toying with the idea of making zucchini soup as well. I've never tried zucchini soup, but I have tried and did enjoy squash soup.

    slice it in half long ways (for those of you still thinking about dicks..ouch!) and put tomato sauce, cheese, and pepperoni on top of each half, then bake it. Zucchini pizza! It helps to bake it for a while before adding the toppings or the toppings will start to burn before the zucchini is done.

    I cut them in half scoop out the insides and fill them with whatever you want! A rice or quinoa filling mixed with cheese and other veggies is nice then topped with bread crumbs. Or a meat filling smothered in cheese.
