i scored some green tomatoes from my CSA. i tried using flax as an egg replacer for the breading, but it didn't really work as well as i hoped. can anyone give me advice on dipped-and-breaded fried veggies and tofu, without the use of eggs? thanks.
I use soy flour mixed with water so that it is the consistency of an egg wash. I've never done green tomatoes that way, but it's worked well for eggplant. Dip it in this first, then in bread crumbs. For battering veggies, you may also want to try chick pea flour mixed with water. Can't remember the name of this, but some Indian friends of mine make it all the time.
I checked my bag, and indeed it is besan! The name I was trying to remember was for the battered veggie dish my friends made... ah, well. Damned brain's like a steel sieve, I tell ya...
The way my family always made them was to use flour and water and spices to taste. Mix it into a batter dip the tomatoes in and fry away. I dunno if that helps.
