Its really hard to think of meals for my self that have good nutritional value are quick(because I am extreamly busy) and my mom is hardly ok with me being a vegitarian because no one else in the family is, she's not too keen on making two meals and I am tired of just eating beans on the side instead of meat. Any good sites or cook books for fast easy meals that I could make on my own. And if it makes a difference I do eat eggs and drink milk( my mom had a hard time with vegetarianism let alone veganism, I tried though.)
i know it's hard being a vegetarian when everyone else in your family eats meat. expecially when they dont approve. my dad doesn't like me being a vegetarian and i get into so many heated debates about it. but he cant say much cos i do all the cooking at home and he neva eats at home anyway but that's another story. for something quick and easy, try packet pastas. there is usually a lot u can find that dont have any meat and they only take 10-15 in the microwave. also frozen veggies are good. they go straight in the microwave. plus they retain their vitamin content longer than fresh veggies so yeah. i also picked up this weightwatchers lasagne. it was tomato with pumpkin puree. it was seriously orgasmic. the only thing i can suggest in relation to your mum, is explain to her why being a vegetarian os so important to you, and take it slowly. dont rush straight into everything and talk non-stop about being a vegetarian. that's more likely to bug her. just remind her that you're a veggie if she ever tries to give you meat and she will slowly come around. peace, luv sunshine
