hedgie's mac and cheese surprise.....

    i don't know if anyone has ever heard of her, but this recipe comes from jan brett's website...she is an AMAZING children's book illustrator/author...hedgie is one of my favorite characters by her....

    3 Cups Elbow Macaroni
    3 Tbsp Olive Oil
    1 cup heavy cream
    1 1/2 cups half and half
    1/2 tsp ground nutmeg
    8 oz Fontina Cheese
    8 0z Extra Sharp Cheddar
    6 oz Parmesan Cheese
    2 tsp Worcestershire sauce
    1/2 tsp white pepper
    1 cup Ritz cracker crumbs

    Preheat oven 400 degrees. Grease large casserole dish and set aside. Bring large poit of water top a boil and cook macaroni al dente(not too soft) Drain well and put in casserole dish. Mix with olive oil. Combine the cream, half and half,and nutmeg in saucepan. Place over medium low heat and add a cup and a half of each of the three cheeses. Slowly cook until melted and smooth 10 minutes. SDeason with worcestershire sauce and cover with ritz crumbs, along with 4 pat of butter, bake for 30-40 minutes.
