My guess is because the heart starts beating when someone is infatuated with someone... not a headache.
Maybe it has to do with that Egyptian thing where they would weigh the hearts? And I think the heart symbol had something to do with the wings of a dove, dealing with Aphrodite, the goddess of loveeeee.
Here is my view: Intellect is the force with which we reason, it is the brakes and the steering wheel. Passion is the force that drives us on and therefore it is the engine. In a way the heart is the engine on which the entire body depends and therefore it is an excellent metaphor for feeling. Another point of view is that one ceases to live when one no longer has love, just as one ceases to live when they no longer have a heart.
My old Spanish Teacher from freshman year thought it was a ball sack upside down. He didn't straight up say it, but he drew pictures on the board and pretty much said it.
I'm about 90% sure that that is the origin of the metaphor. I am quite sharp when it comes to these things but don't ask me to fix your car or give you relationship advice.
