After this post I am going to bring some potatoes to a boil, cool them off and then grate them. I will chop a part of an onion, 4 cloves of fresh garlic and some broccoli. I am going to fry them in olive oil. Non vegetarians can add eggs and butter. Plus top with sharp cheddar cheese. Fry to a nice crisp hash brown texture. Best if made in cast iron. I tend to either top it off with salsa or Tabasco. Adding spices like basil, curry, paprika, pepper, salt, and rosemary are optional. soy sauce is also good on them. I learned to make them in a collective restaurant I once worked at called Seward cafe.
