Yes clarified butter, it's a staple in a lot of Indian food. Tasty as fuck (obviously). I don't really buy it unless I need it, though. What do you typically use it for?
I only use it in my sacrifice rituals (to my God of toenail clippings) works great for dry skin on the side of my foot
I have cooked a lot of recipes that called for ghee but I usually just substitute butter because I always forget to buy ghee
It's a waste of money to buy ghee when it's so easy to make your own. I love it. I rarely use regular butter anymore.
Simmer butter on very low heat. It'll start to foam, then you'll see burnt solids start to collect around the side of the pan. After it's clear with no more foam, pour it into a glass jar through cheese cloth. It'll cool and turn back into a creamy solid. Easy peasy . It can be kept at room temp.
I have been using it for years, especially for pan frying fish. When I make my own, I boil up a packet of butter in some water to the point of melting and let it go cold overnight. Then refrigerate.Once the yellow bit is solid I wash off the the milky liquid and return to a clean pan and slowly heat until it stops bubbling.
