Eggnog Quick Bread

    I posted this over at the Kitchen Table and I thought I'd post it here too.

    This is a great recipe for the holidays. I usually make a bunch of 'em to give to family and friends.


    2 eggs
    1 cup dairy eggnog (not canned)
    2 teaspoons rum extract
    2 1/4 cups all-purpose flour
    1/2 teaspoon salt
    1 cup white sugar
    1/2 cup butter
    1 teaspoon vanilla extract
    2 teaspoons baking powder
    1/4 teaspoon nutmeg -- ground

    Preheat oven to 350 degrees. Grease 9x5 inch loaf pan. Beat eggs in large bowl. Add sugar, eggnog, butter, rum extract and vanilla; blend well. Lightly spoon flour into measuring cup, level off. Add flour, baking powder, salt and nutmeg, stirring just until dry ingredients are moistened. Pour into greased pan. Bake 40 min. to 1 hour or until cake tester comes out clean. Remove from pan. Cool completely. Wrap tightly and store in refrigerator.

    NOTES : This cake gets better with age. If desired, recipe can be baked in two 5 3/4x3 1/4 inch loaf pans. Bake these at 350 degrees for 35-40 minutes.

    Wow, that sounds pretty yummy! I bet my crew here would love it. I'll definitely have to try that one. :)

    Do you know if the 1/2 cup of butter could be split in half and still produce a tasty bread, as in, using 1/4 cup of butter and using a replacement for the other 1/4, or simply just discarding the other 1/4 and only using 1/4 of butter and that's it? Normally, I split the amount of butter or oil called for in a recipe in half, unless it will really affect the outcome. Just wondered if you had experimented with any of that and what the outcome was.
