    If you'd rather not use a raw egg in dressing, you can add a coddled egg to the dressing. To coddle eggs, place a room-temperature egg in simmering water for 1 to 2 minutes. Remove from water, crack open, and whisk into dressing. Microwave: Crack egg into a small glass bowl. Place bowl in microwave and heat for 12 to 15 seconds. Transfer egg to ice water to stop cooking. Whisk into dressing.
