These have it all! Traditional oatmeal cookie base with super smooth puree of fresh Medjool dates in the middle and a sophisticated crumble topping set off this healthy treat. Recently found a vendor selling fresh Medjool dates by the kilo. Great price! must have been a good crop this year. The filling: 2 and a half cups pitted Medjool dates chopped 1 cup water 2 tbsp lemon or lime juice 2 tbsp brown sugar 1/2 tsp baking soda The crust: 1 3/4 cups quick oats 1 cup flour 3/4 cup brown sugar 1/4 tsp baking powder 3/4 cup salted butter, softened Butter your 8" x 10" baking pan, heat oven to 350 F (180 C) In a saucepan combine all filling ingredients and bring to a gentle boil, stirring constantly with a wooden spoon. Simmer 5 minutes until mixture begins to thinken. Remove from heat and cool. In a separate large bowl combine all the other ingredients for the crust, stir to combine. Spread half the crust mix into the pan, spread evenly and press firmly flat. Spoon date mix and spread evenly for the next layer, then cover with the last of the crumb mix. Press lightly, bake 55 minutes until beautifully browned. Cool on a rack for several hours, then cut with a sharp knife into squares. Enjoy! Lots of health benefits from dates by the way!
