PIZZA BEANS! I invented it myself a few weeks ago! The little boy I babysit thought it tasted like pizzza! One pound turtle beans, soaked... cooked for however long in the crockpot one pound sausage diced, fried w/ garlic, onions, dried pepper some cooked rice.. I dunno how much... just mix it all together, add grated cheese. It doesn't sound very good now that I've written it down. But it's super-cheap, and healthy.... save the cheese and sausage (but without that it wouldn't be PIZZA BEANS, it would just be beans and rice...)
My favorite crock pot recipe is one I got from my grandma. It's fairly cheap for as much as it makes, fast, easy, and it tastes even better reheated. 1 bag frozen shredded hash browns. 2 cans cream of mushroom soup. ( I like to add an extra can of mushrooms.) 1 small container of sour cream. Shredded cheddar cheese. ( I use sharp, but mild is good too) Simply mix all ingredients in your crock pot (you don't even have to defrost the potatoes) and heat on medium, stirring occasionally until potatoes are cooked. I love this dish and it feeds 4 - 6 people. For the bigger crock pots, simply double the recipe.
A crock pot makes the best beans. First prepare the beans: Bring a big pot of water to boil. turn off the heat. pour in dried beans, put a cover on and let it soak overnight or for 6-8 hours. Then drain and rinse the beans. Put the beans in the crock pot and add chopped celery and onions and enough fresh water to cover. It doesn't matter if you have a little too much water, but you don't want too little. (you can add chopped carots if you wish) Cook in the crock pot on high. It depends on the type of beans and how fresh they are, may take from 4-8 hours to cook done. I like to fold a dish towel and lay it on the top of the crock to help retain heat. The beans are done when they are soft enough to eat. Try not to over cook. I package them in Zip Lock containers or Sour Cream containers in the freezer. This holds enough for a stir fry or other dish for two. They keep in the freezer 3 - 6 months. You can soak the beans in the early evening, then rince and put them in the crock pot overnight. In the morning you'll have cooked beans -you can freeze some and have some to put back in the crock pot for that evenings supper. You can also use these pre-cooked beans in the same way you would use canned beans. The celery and onions will add to what ever dish you use them in. Take the beans out of the freezer, microwave for a minute to loosen and dump into what ever dish you're making to finish the defrost. One caution about cooking beans, don't add tomatoes, vinegar, lemon or anything acidic before they are done cooking or they will never get soft. The recipe below calls for canned or these pre-cooked beans. This is one of my favorite recipes. I have made it in the crock pot and on the stove with a flame defuser. Easy Black Bean Soup Combine in a 5 qt pot or larger: 4 cups (or more) of prepared Black Beans* 2 -12 oz Cans of Broth (3 cups, I make my own, Beef was the original, I'm veggi) 1 -28 oz Can peeled Tomatoes (I slice them in the can, then add, but you can mash them in your fist and add too) . . . . Stewed Tomatoes work great for this. 1 cup water (add more water if beans don't come with much) 2 big cloves garlic, chopped fine 1 minced onion (I use yellow -the flavor doesn't wash out) 2-3 smallish potatoes, diced Optional: I like to add a little parsley, and a bay leaf (toward the end of cooking) Cover pot and simmer on very low for 5 hours or cook in the crock pot for 5-8 hours on med. You may puree a portion and return it to the pot for a creamier soup. Serve Hot or Cold with a squeeze of lime juice. You can add a dollop of yogurt, buttermilk, or Sour cream (my favorite) and a dash or cumin. . . . . (the cumin is too strong to add directly to the crock pot, I sometimes skip this, but a dash of turmeric or curry powder is nice too) This is excellent with lime and Feta cheese. Everybody goes nuts for this soup! I used to make a big pot once a week. *You want real Black Beans, not the stuff that's called Black Beans on the can but when you open it they look like Kidney Beans.
