    alright, so I'm getting annoyed at the uber unhealthy convenience/canned crap in our house and want some suggestions for quick, easy meals

    (im also getting annoyed at my bfs pickiness... anything from other culinary worlds ie japanese or greek is "weird", any cheese save for marble is out and can only be melted if its combined with a tomato sauce, ie lasagna or baked spaghetti, everything must have a meat for him to eat it, he generally doesnt like veggies and even zucchini/basic squash are weird. FUCK)
    anyway

    easy quick recipes! recipe exchange, yay! preferably with cheap ingredients :D

    heres my uber easy recipe, which has "weird" food for you meat n potato people

    1 can black beans, drained and rinsed
    1 can corn, whole kernel, drained
    1 c grape tomatoes, halved or quartered
    1 c diced sweet bell pepper
    1 c diced mango
    4 tbsp minced fresh cilantro
    4 tbsp lime juice
    1 tbsp olive oil
    1/2 tsp cumin
    1/8 tsp chili powder
    salt and pepper to taste
    1 c diced avocado

    mix all, leaving avocado til last (it likes to brown once its exposed to air)
    i often add diced cucumber, and skip the mango during the winter generally. i also double the cilantro and lime, but thats me, i lurv cilantro and citrus

    Best munchie recipe in zeh world:

    1 cup of butter
    1 cup of brown surgar.
    1 cup of choc. chips, marshmellows and other sweet stuff.
    soda crackers.

    layer a cookie sheet with crackers.
    Bring surgar and butter to a boil, gotta sift it so it thickens.
    When its caramelized pour it on the crackers and bake for a bit, then add the chocolate chips and other stuff. Cook again.... freeze it.

    bombest muncie ever and cheap.

    whoa that is picky. makes me appreciate the men in my life who will eat anything I put in front of em. I made a spinach mushroom stuffed chicken breasts covered in marinara and cheese casserole, if he dont like chicken, replace with thick cut pork chops or steak. meatloaf is always good.. MMM Ima make yellow squash casserole this weekend.

    recipes dammit!
    i have a really yummy leak soup one ill have to dig out, its hiding on me :( super easy and delicious tho

    want a recipe for THE best guacamole ever!!! I am a cooking fanatic, but none of my recipes are fast. Im making enchiladas today.

    Mushroom porkchops are like WAAAAY easy. You just buy a family size can of cream of mushroom soup for every pound and a half (I have no idea how they measure meat weight in metric, so I apologize) of porkchops. Put the porkchops in a baking dish, then cover with the soup, then bake it at 350 degrees F for about an hour or until the porkchops are cooked through (very light pink or white in the middle). My boyfriend HATES mushrooms, but loves this stuff. And if you absolutely can't get him to eat mushrooms at all, then you can always substitute your choice of barbecue sauce for the soup.

    Not really a veggie dish, but it's yummy anyway.

    I have a few things I make that I seem to like... here's one..

    Baby Spring Mix
    Little bit of salad dressing (I use ceasar)
    Grated cheese
    tomatoes
    Cold cooked pasta noodles (I use the spinach and tomato kind)
    Onions

    Mix all this together and you have a filling ass meal, those pasta noodles fill you up.. it's quite good...

    I also mix pasta noodles with cold salsa...It's pretty good..

    I always make a pita bread sandwich with this salad.

    1 can of Kidney Beans
    1 can of Chickpeas
    1 can of corn
    Mozzarella, cut in cubes
    Tomatoes, cut in cubes
    White Onion, cut in cubes

    Dressing:
    Lime juice
    Pepper
    Olive Oil
    Salt

    I dont really follow any measure, I just make it that it's all color balanced, so there's not too much of one thing.

    My other Pita Bread Sandwich is with

    Mozzarella, Tomatoes and Avocado all cut in cubes and I use the same dressing as above. (lime juice, olive oil, salt and pepper).

    Oven BBQ Chicken

    2 tbsp oil
    1 onion, chopped
    1 can (389ml) tomato sauce
    1/2 c water
    1/4 c lemon juice
    1/4 c brown sugar
    1/4 c worcestershire sauce
    2 tbsp prepared mustard
    dash salt
    dash pepper

    Heat the oil in a saucepan, add the onions and cook until they are translucent. Add the remaining ingredients and simmer over med-low heat for about 15 minutes.

    Next take 4 or 5 chicken leg quarters, skin and backs removed.

    Arrange them in a 9"x13" casserole dish. Pour the sauce over top. Cover with foil and bake at 350 for 90 minutes, removing the foil after an hour to thicken the sauce.




    This is REALLY good, the chicken falls off the bones and tastes like ribs. I serve it with mashed potatoes and lots of veggies.

    not really a recipe, but when im craving sweet n sugar, i end up eating a small bowl for frozen berries (like the mixed kind you can get)... healthier than ice cream and satisfies in pretty much the same way

    2 boneless skinless chicken breasts
    One packet taco seasoning
    1/3-1/2 jar thick and chunky salsa
    1/2 cup shredded cheese

    Pre heat oven to 375
    Rub about half taco seasoning into both sides of chicken breasts
    Place chicken in ungreased 8 inch square glass baking dish
    cover chicken with salsa
    Bake 25-35 minutes or untilchicken is fork tender and juices run clear.
    Sprinkle with cheese, and bake another 3-5 minutes or until cheese is melted.
