    My favorite on the list is still tef. It's used to make injera (sourdough pancakes).

    That's what they eat in Ethiopia.
    I had that and it totally fucked me up. I must be allergic. I heard the leavening is spit then fermented. Is that true?

    Not sure how to take that. Most Ethiopian restaurants I have been to (Los Angeles, Oakland, DC, London, Baltimore, San Francisco, Alexandria) have been spotless. Sorry to hear of an allergy. It can be made with other grains.

    Maybe that's how they make their beer too, with spit. I've seen video of primitive people doing that, like in the Amazon.
