chocolate brownies?

    I'm looking for good chocolate brownie recipe. Crispy on the top and chewy in the middle.
    Anyone have one?

    Magic Brownies.

    1 stick butter
    4 1 oz.squares unsweetened baking chocolate
    2 large eggs
    1 cup sugar
    2 teaspoons vanilla
    1/2 teaspoon salt
    1/2 cup all-purpose flour
    1/2 cup chopped nuts
    cooking oil spray
    1/2 cup semisweet chocolate chips

    1. Combine the butter and chocolate squares in a 2 cup glass measure and microwave, uncovered, on high, until the the butter is almost completely melted, about 2 minutes.

    2. Meanwhile, beat the eggs in a 2 quart or larger bowl with a whisk until foamy. Whisk in the sugar, vanilla, and salt.

    3. Stir the chocolate and butter mixture until the chocolate is completely melted and the mixture is blended, then add it to the egg mixture and stir well to blend. Stir in the flour and then the nuts ( if using). Spray an 8 inch square or 9 inch round microwave safe baking dish with cooking oil spray and pour in the batter. Sprinkle the chocolate chips evenly on top.

    4. Microwave, uncovered, on high until the batter is just set and a toothpick inserted in the middle comes out clean, 4 1/2 to 5 minutes, rotating the dish a quarter turn after every 60 seconds (See Note). Do not over bake. Cool until barely warm and serve.

    Note:

    The time is based on a 700-watt oven. Adjust the time according to your oven power.

    Fudge Brownies
    • 1 cup melted margarine (2 sticks)

    • 2 cups sugar
    • 4 medium eggs
    • 1/2 teaspoon salt
    • 1/2 cup unsweetened cocoa
    • 1 teaspoon vanilla
    • 1-1/4 cups flour
    First off, don't be tempted to put baking powder or baking soda into this recipe, thinking I have forgotten to list it above. This recipe does not call for any leavening other than the eggs. This is the secret that makes them chewy and fudgey. There is another recipe for Cake Brownies which does call for baking powder, if that's really what you want.

    So, first melt your margarine (I do it in the microwave). Next get out a large bowl and combine the margarine and sugar with a spoon or whisk. Add all four eggs, and beat the mixture until it is sort of fluffy and emulsified. Add the salt, cocoa, and vanilla. Stir up really well. Add the flour. Stir again until the mixture is thick and chocolatey. Turn the batter into a well oiled 9 by 13-inch pan. Bake at 350° for 25 to 30 minutes. Remove from oven and cool before serving. Cut into 32 small squares.
