chicken mango curry

    chicken mango curry is my favorite curry dish bar none.

    -1/3 cup peanut or vedgeble oil
    - 4-5 tblsp red or yellow thai curry paste.
    -2 cloves garlic
    -28oz coconut milk
    -1 cup chicken broth
    -abut an inch of fresh ginger cut into slices and crushed.
    -1 red, and 1 green pimento...and or substiute hot peppers if you can handle it. birds eye peppers are comon in Thai food
    -1 green (not ripe) mango, skinned pitted and cut in to thin strips
    - 1 can straw mushrooms,
    -6tblsp of nam pla (thai fish sauce)
    3tbls brown sugar
    1/4 cup cilantro
    1lb deboned chicken, cut into strips

    about 6 cups of cooked rice to serve it on, (two cups dry rice, 4 cups water)
