Why dont Catholics say the end of the lords prayer ie: For yours is the kingdom the power and the glory for ever and ever amen.

We do say it. We just say both versions at different times. It is recorded twice in the NT and one time leaves out the last part as well. We say the last part after the priest says anopther short invocation during the Mass. If we are just saying it by our lonesome, then we leave it off...

I will get back with the details why and/or theological reasons for this.

Well the reasoning behind leaving off the final doxology is that it isn't found in Luke or in the earliest manuscripts of Matthew.

During the revision to the Latin rite Mass in 1970, it was included as a part of the prayer but as an independent item after the priest elabborates on "Deliver us from evil...". I do not think there is any deep theological issue over this because Eastern rite CHristians (including Catholic ones) recite the prayer with the doxology intact.
