Carrot cake recipes?

    I'm making a carrot cake for my little sister for her birthday this Friday, and I was wondering if anyone has any different recipes than the same old same old?

  2. This is my favourite. I don't think it needs the traditional cream cheese frosting but if it's for a birthday - yeah
    250g/9oz plain flour
    2tsp baking powder
    1 tsp salt
    1 tsp bicarbonate of soda
    150g/6oz brown sugar
    50g/2 oz chopped walnuts
    220g/8oz chopped tinned pineapples
    handful of sultanas
    2 mashed bananas
    flesh of a passion fruit
    150g/5oz grated carrots
    150ml/5 fluid ounces corn oil (or sunflower)
    3 eggs

    Heat oven to 160ÂșC
    Sift the flour, baking powder, bicarb and salt into a large bowl
    This is the good bit - throw everything else in and mix well until it's all incorporated
    Pour into a 9 inch cake tin and bake for about an hour/ hour and a quarter
    If it looks like it's getting a bit too brown put a piece of baking foil on the top

    I'm sure if you make carrot cake you will have a recipe for the frosting.

    Yeah I got an icing recipe already, thank you very much :D I'll use this recipe it sounds good!! :2thumbsup:
     
  4. You can leave out the passion fruit if it's not available where you live - it's still a great cake!
