So, my husband and I are going camping next weekend and it's our first trip since we stopped eating meat. For some reason I'm having trouble thinking of food to take with us. What are some of your favorite vegetarian camping foods?
raman noodles, cabbage(cole slawmix) dried fruit,flour , oil,assorted spices, nuts.. with that ya can make 27 meals of differing variaties
Veggie Shish Kabobs (roasted veggies on a stick)! Mac n Cheese (assuming you're not vegan) Pita sandwiches Veggie Hot dogs Pancakes (mix + water)
hmmm,,,if yer just camping,, an not hiking in,, man the possibilities are endless.. they are 2 completley diffrent menus,, with a 1000 more options for car campin,,than hiking in camping.. so perhaps ya should explain what kinda "camping" yer doin.. so as we the good folks of this forum,,could perhaps better assist you in your problem.. luv n light
How 'bout raw veggies cut thin and cooked in a tinfoil packet with your favorite sauce? Rice cooks okay over a campfire, and so do beans... so I'd go Mexican. But I'd always go Mexican And anything you can think of to go into a wrap sandwich shoud be good. love, mom
I'm with moms about the veggie-foil packets-very yummy. The foil keeps the ashes out. I'd go with some zucchinni(much higher vitamin content than summer(yellow) squash), carrots, mushrooms, tomatoes and loads of garlic and fresh pepper. yummy. Also, corn is a great option, baked potatoes, etc. If you've got a grill, hook up some portabellos before you go, with olive oil, garlic, s&p, then grill up and serve like burgers. Boy, I love camping.
there are so many products out that you could do the whole "traditional" camping fare "eggs (scrambled tofu) bacon (fake bacon), etc. Bush's makes a vegetarian baked bean.
I love eating veggies cooked in tin foil! Dried fruit is also a must have...and you can always do peanut butter sandwiches for protein!
Like most items, the answer is yes and no. Most ramen spice packet have some sort of chicken or fish or beef in them. Some of the noodles may have dairy. You may take just the noodles and add your own spices, or look for a veggie one. The "Oriental" store brands are what I have had the best luck with. Or you could always go get Fantastic Brands ramen. They are SO good and there are a lot of flavours to choose from. I like the veggie "chicken" noodle and Miso with ramen. They are more expensive, but higher quality, vegetarian, and delicious www.fantasticfoods.com (the link doesn't seem to be working right now....)
I don't go camping but I do a lot of brown bagging. I am most fond of pickled vegetables from the local Asian markets; mustards, daikon, eggplant, sprouts.
Ramen Noodle Thing... I buy this 1lb containter of vegetarian bouillon mix for $7. Its made by an oriental company. Its fat free and doesn't have any preservatives. I get it from our health food/ethnic food store. You could always find something like that and add a pinch to the ramen. That way it would still be cheap and easy.
Ohhh, do you know the brand name Mystic??? I've been looking for something like that, but all I'd found was teensy tiny 2oz containers! love, mom

We camp quite a bit, family camping style with a tent camper (after graduating from a tent). Potatoes: You can bake these up ahead of time, then grill them up with your fixings. Or, foil them and toss them in the fire. Another poster mentioned veggie foil packets, aka hobo meals. Same idea. Cut up all your choice of veggies, add some seasoning, maybe a little oil or water. Put them all together in a foil packet and grill. If you're looking to save some time, cut everything up ahead of time (if you take a cooler w/ you). Eggs: If you eat eggs, boil them up ahead of time. Or, you can take along eggs & veggies for a scramble. You mix everything up in a zip baggie, then boil the whole bag. Veggie burgers: Problem here, they're frozen. So, put them in the cooler and eat your first night. Or second night. Hubby loves these for camping. Fruit: I've taken along apples, skewered them and baked with a little cinnamon over the campfire. Yummy! Pancakes: I love pancakes when camping. I mix up the dry ingredients at home. I also use an oatmeal pancake recipe from a backpacking foods cookbook from The Sierra Club - so then all you need is water and maybe some oil. Dried foods: Previously mentioned, fruit (add to you pancakes!). Granolas. Soup mixes. Pastas. You can also get pre-packaged 'camp' foods if you can spare the change. I also like to take along home-baked goods, usually muffins or cookies. Muffins are usually quick to prepare at home. The options are endless, but it all depends how much time and space you have. Regardless, have fun!
