I'm going out to a music festival this weekend and I was wondering if any of you guys had good suggestions for meals while we are camping. I'd like so more selection other then Puritan and hot dogs. Please keep in mind that we are going with some veggetarians.
pb&j...celery and PB, if you can have a fire there is the tried and true ramen noodles, i'll think of more and let ya know..
If you have a fire, I like those rice and beans mixes that you cook with water...like zatarans red beans and rice...throw a potato on the hot coals...
On festivals I always bring a disposable barbecue and some hamburgers and bread rolls. Maybe get some tofuburgers for the vegetarians.
migas!!!! You just need a pan over the fire, some salsa eggs and tortilla chips and whatever veg you find.
you are the first person outside of my family who has mentioned this.... it's so fucking good though isn't it?? so simple, we have it with corn tortillas and onions fried up and then add egg and have it with salsa... so yum.
Grilled veggie packets. Wrap a combination of your favorite fresh cut veggies and 1 to 2 ice cubes in foil, making a sealed packet. The foil holds in the heat and the ice cubes provide just enough moisture to grill the vegetables to crisp-tender perfection. You can do this on the grill, or use a small grilling rack over a campfire. Then just season to taste. I like to put my seasonings in prior to grilling. You can top the grilled veggies with some shredded cheese too.
Here's a recipe for a broccoli casserole packets... 1 sheet (18x24-inches) heavy-duty aluminum foil 6 cups fresh broccoli florets 1 can (10 3/4 oz.) cream of mushroom soup, undiluted 1/4 cup mayonnaise 1 tablespoon Worcestershire sauce Salt and pepper 2/3 cup shredded sharp Cheddar cheese 2/3 cup herb seasoned stuffing Center broccoli on sheet of aluminum foil. Combine soup, mayonnaise, Worcestershire sauce, salt and pepper; spoon over broccoli. Sprinkle with cheese and stuffing. Bring up foil sides. Double fold top and ends to seal making one large packet, leaving room for heat circulation inside. Grill for 10-12 minutes in a covered grill.
Here's a recipe for grilled veggie pizzas 1 sheet (12x30-inch) heavy-duty aluminum foil 1 12-inch Italian bread crust 1 cup meatless spaghetti sauce 1 medium zucchini, thinly sliced 1/2 medium red onion, thinly sliced 1/2 cup shredded carrot 1 cup shredded Mozzarella cheese Spray foil with nonstick cooking spray. Center Italian bread crust on sheet of aluminum foil. Spread sauce evenly over crust. Arrange vegetables over sauce. Bring up foil sides. Double fold top and ends to seal making one large packet, leaving room for heat circulation inside. Grill 10 to 13 minutes in covered grill or until vegetables are crisp tender. Carefully open and fold back foil; top with cheese. Grill 2 minutes longer or until cheese is melted.
Yummy, I'm making minestrone soup right now..That, & this thread are making my mouth water. These are good suggestions... Now I'm going to have to try salsa eggs myself.
Here's a recipe for southwestern potato packets... 1 sheet (18x24-inches) heavy-duty aluminum foil 1 medium onion, thinly sliced 4 medium potatoes, cut into small 1/2–inch cubes 1 teaspoon seasoned salt 1/2 teaspoon chili powder 1/4 teaspoon ground cumin 1 can (4.5 oz.) chopped green chiles, undrained 1 cup shredded Cheddar cheese Salsa, chopped fresh cilantro, sour cream Spray foil with nonstick cooking spray. Center onions on sheet of aluminum foil. Top with potatoes. Combine seasoned salt, chili powder and cumin; sprinkle over potatoes. Top with green chilies. Bring up foil sides. Double fold top and ends to seal making one large packet, leaving room for heat circulation inside. Grill 15 to 18 minutes, or until potatoes are tender, in covered grill. Sprinkle potatoes with cheese. Let stand about 2 minutes until cheese melts. Serve with salsa, chopped fresh cilantro and sour cream.
Those are some tasty sounding meals. Unfortunately, I don't have the means/time to put that much effort into food while I'm camping. I'm just too lazy.
