Bread The SF Diggers way

    These are the bread recipes that the diggers used when they feeded the hippies in the Haight

    I have a question about the first recipe. In the wet mix the use 1 cake or package of yeast.
    How much is that exactly???

    1 cake of fesh yeast is equal to one package of dry yeast (the little packages you can find at the grocery store) which should mesure 2 1/4 teaspoons. So if you're not using prepackaged yeast just mesure out 2 1/4 tsp of yeast for every package or "cake" called for.

    By the way, you can always use less yeast and let the dough rise for longer, or use more yeast and it will rise quicker. Mostly it's a matter of taste. Artisan bread usually uses less yeast and rises for longer, to let the natural flavor of the ingredients come through and not be overpowered by the flavor of the yeast.
