invented this a few days ago and everyone who has tried it liked a lot. 1 cup quinoa 1 cup farro 1 cup diced tofu(firm) 1 can chick peas 1 cup sliced grape tomatoes(give or take, I didn't measure. 2 small bell peppers chopped 1 cup shelled soybeans Dressing ingredients: juice of 1.5 lemons(2 if ur squeezing by hand) 2 cloves garlic grated 1 shallot grated 1-2 tsp grated ginger root cilantro salt and pepper to taste 3 tbsp white balsamic vinegar 3 tbsp grapeseed oil mix ingredients for dressing together and let sit in fridge for a few hours. mix salad ingredients and let cool. smoke a bowl(optional) add dressing to salad as needed. I keep it separate from the salad and add to each serving. adding the dressing to the whole thing and leaving it like that may make the veggies soggy. I added powdered ginger and cumin to the quinoa and farro while cooking but this step is optional. next time i think I'll just add it to the farro and cook the quinoa in vegetable stock instead of water. excellent to bring camping/hiking, gives a ton of energy and will stay fresh unrefridgerated for hours. let me know what you think
how many grams of protein is it? lol smoke a bowl (optional). Should've thrown that step in there a couple of times.
havn't worked out the exact protein content, will do when I get home. between.the quinoa, soybeans, farro tofu and chick peas I'm thinking at least 25g per cup but thats just a guess
